These glorious little quail eggs. They have neat little spots and are so tiny and delicate. I had to get some. Sexy EggsSexy Eggs Well I did, and they were awesome! I took a small saute pan with a bit of bacon fat and fried the little guys, sunny side up. I dusted them with a bit of chili powder, salt and pepper, and added some thinly slice chilies. Chorizo Scramble with Basil and Tomatoes

I remember when I was a little kid, I would sit with my Great Grandmother, Clytie, in Mississippi, and snap green beans together. It freaked me out a little bit back then, but I learned something from her that I will never forget. They had a huge farm near Clarksdale, MS and there was always plenty of food. It was a place where bacon made everything better and if any of us had a problem, the only thing we needed was to hear Clytie say, "Let me get you somethin' to eat." She reminded me alot of Julia Child. She had the mentality of "If it tastes good, eat it, better yet, let's eat it together." That was pretty much the way it was. Eggs, Chorizo, Basil and TomatoesEggs, Chorizo, Basil and Tomatoes Today, I made a beautiful scramble with crispy chorizo, caramelized onions, some diced tomatoes and a chiffonade of basil. Chorizo is such an awesome ingredient. It's a pork sausage with chili and paprika and it originates from Spain.

Valentine's Day Dessert... easy enough for a dude, glamorous enough for the ladies...

Puffs, Strawberries and Lavender Cream

Every lady loves when her man can cook for her. This dish is a win win situation. GUYS- You can do this... relax... its easy... she's gonna love it! Start in the frozen food isle of the grocery store. Grab the frozen puff pastry sheets, then some Sliced StrawberriesSliced Strawberries fresh strawberries, heavy whipping cream, powdered sugar and some lavender leaves (you can find them with all of the dried herbs.) Pre-heat the oven to 375. PuffsPuffs Let the puff pastry sheet thaw to room temp (about 20 minutes) cut the sheet into 3 inch squares and place on a non-stick sheet tray, sprinkle with some regular sugar (granulated sugar) and pop it into the oven for 10 minutes (or until golden and puffy) Whipped CreamWhipped Cream Add the cream and some powdered sugar to a big bowl and whisk until it looks and feels like cool whip. Lavender Whipped CreamLavender Whipped Cream Add a tablespoon of the lavender leaves and gently stir them in.

Chicken Parmesan is Rad!

Chicken Parmesan with Tomato Basil Pasta

I had a craving for Chicken Parmesan the other day and decided to give it a go. It was actually alot easier than I remembered. I grabbed two bowls. One for some bread crumbs and the other for an egg, beaten with a touch of milk. I took 2 chicken breasts, dried them off and dipped them into the egg mixture then coated them with the bread crumbs. Chicken Parmesan in the ovenChicken Parmesan in the oven I added some salt and pepper, chopped basil, oregano, thyme and rosemary to the bread crumbs to boost the flavors a bit. I placed them in the fridge for about 10 minutes to let them cool before I popped them into a saute pan with some olive oil. After about 5 minutes on each side, the chicken breasts were perfectly golden and the crust was crispy and beautiful. I placed them in a casserole dish, poured over some tomato sauce and covered with mozzarella and parmesan cheese....ooohhhh...so good! I popped the dish in a 350 degree oven for about 30 minutes and ZaDing! It was pretty simple. I paired it with some spaghetti, fresh cut tomatoes, a chiffonade of basil and a bit more grated parmesan.

Chicken Enchiladas

I was reading about some tex-mex cooking the other day and the hunger monster totally hit me. I was craving some wicked enchiladas! I have never actually made them, but I wasn't gonna let that stop me. I hit up the grocery store and grabbed some of the stuff I needed... lettuce, tomatoes, cheese, enchilada sauce. I figured it would be way easier to go with the pre-made enchilada sauce for my first go at one of my favorite dishes. I also grabbed a few cans of whole roasted green chilies and some ground chipotle. I love Chipotle, its such a great way to incorporate heat AND flavor at the same time. You could add some cayenne or even hot sauce, but I like the flavor profile of chipotle. Its smoky and so rad! I started by cooking some chicken in a saute pan with some cumin and paprika and a touch of chipotle powder. After they were cooked, I used two forks and pulled them apart into small pieces. I added some chopped red onions, corn, garlic, peppers and some more spice to the saute pan and caramelized them for about 4 minutes, then added the chicken back to the pan.
