Spiced Carrots and Sweet Potatoes

Ingredients: 

1 large sweet potato (about ½ a pound), roughly chopped
3 large carrots, large chop
1 red onion, rough chop
1 tablespoon lightly packed brown sugar
1 tablespoon curry powder
½ tablespoon paprika
½ tablespoon cinnamon
½ tablespoon chili powder
1/8 teaspoon cayenne pepper
3 tablespoons olive oil
½ cup beef stock
salt and pepper

Instructions: 

1. Preheat your oven to 400 degrees.

2. Combine all ingredients except for stock, in a large bowl and mix so the spices evenly coat the carrots and potatoes. Once mixed, place into a shallow oven dish add stock, cover with a bit of aluminum foil and put in a preheated 400 degree F oven for 20-30 minutes.

3. Remove the foil lid after about 15 minutes so the top will brown and the liquid at the bottom of the dish will reduce a bit and make for a better bold flavor. And that’s it…super easy and awesome. Pair with some grilled steaks or roasted pork.
