4 ears fresh corn, cleaned and hulled
½ red onion, small dice
½ red bell pepper, small dice
1/2 tablespoon chopped garlic
½ jalapeno pepper, small dice
1/3 tablespoon paprika
1/2 tablespoon chili powder
2 tablespoon rough chopped cilantro
2 tablespoons olive oil
salt and pepper
4 lime wedges
Action:
1. In a large mixing bowl, cut the kernels from the corn cobs and add the onion, bell pepper, garlic, jalapeno, paprika, chili powder some salt and pepper and mix evenly.
2. In a large sauté pan over med-high heat, add the olive oil then the corn mix. Saute for about 5 minutes, or until the corn gets hot and lightly browned, then add cilantro and stir to incorporate. Once the salad is wicked hot, serve with a squeeze of lime.
