1/2 sheet frozen puff pastry, brought to room temperature
1 tablespoon granulated sugar
1/2 cup Heavy cream
1 1/2 tablespoons powdered sugar
1/2 tablespoon lavender leaves
6 fresh strawberries, sliced
For Garnish:
2 tablespoon powered sugar
1/2 tablespoon lavender leaves
Action:
1. Cut the puff pastry sheet into squares (about 6, 3 inch squares), place on a non-stick sheet tray, sprinkle with granulated sugar and place into a 375 degree oven for about 10 minutes or until golden and puffed.
2. Add the cream and powdered sugar to a large bowl and whip until the peaks are firm. Almost like the consistency of cool whip.
3. Add the lavender leaves and stir to incorporate.
4. Once the puff pastry is finished, remove from the oven. To plate, add a small dollop of whipped cream to the center of a plate then add one square of puff pastry. Make a layer of strawberries evenly over the top and add another dollop of whipped cream. Add another square of puff pastry and repeat with the berries. Add one more piece of puff pastry on top.
5. Garnish with a light dusting of powdered sugar and a pinch or two of the lavender leaves, then serve.
