4 jalapeno peppers, cut in half and hollowed out (seeds and veins removed)
1 cup lump crab meat, fresh is best but canned is cool too
1/2 red onion, small chop
1/2 red bell pepper, small dice
1/2 tablespoon chopped garlic
the juice of 1 lime
1 tablespoon chopped cilantro
1/3 cup fine bread crumbs
1/2 cup shredded mozzarella cheese
salt and pepper
olive oil
a few wedges of lime for garnish
Action:
1. Using a large mixing bowl add the crab, onion, bell pepper, garlic, lime juice, cilantro, bread crumbs with a bit of salt and pepper and some olive oil. Mix evenly to incorporate all ingredients.
2. Using a spoon, fill the hollowed jalapeno peppers with the crab mix and place on a sheet tray or in a casserole dish. Sprinkle the shredded cheese over the tops and place in a 350 degree oven for 15-20 minutes.
3. Once, the cheese is golden brown and melty, remove them from the oven and serve with a squeeze of fresh lime.
