12 ounces Fresh Tuna Steak (sliced into 2 even steaks)
1 cup Wasabi Peas
4 stalks green onion, cleaned and each sliced into 3 pieces
4 oyster mushrooms
4 shiitake mushrooms
1/2 tablespoon chopped garlic
1 tablespoon soy sauce
salt and pepper
1 teaspoon sesame oil
olive oil
Action:
1. Using a coffee or spice grinder, grind the wasabi peas until the are like a course bread crumb. Lay the 2 tuna pieces on a plate, add a bit of salt and pepper, and coat evenly with the wasabi crumbs.
2. In a large saute pan over high heat, add a bit of olive oil and the sesame oil, then add the green onions and mushrooms. Allow the veggies to caramelize for about 4 minutes then add the garlic and the soy. Allow to cook another 2 minutes.
3. While the veggies are cooking, using a large saute pan, add a bit of olive oil and turn to high. As soon as the oil begins to "smoke" (meaning it is really hot) place the tuna steaks into the pan. Allow to cook for 45 seconds, the flip and repeat on all sides.
4. Once the Tuna is finished, remove from the pan and slice evenly on an angle. Each steak should yield about 5-6 slices. Place the caramelized veggies on the side of the plate, then add the pieces of tuna, one over the other and garnish with a bit of the wasabi crumbs then serve.
